Another wonderful story this week from Nolanโ€™s teacher on how sweet he is to the other kids.

They other day she told me there is a boy who struggles with playing with friends and he plays alone; she said Nolan always goes and plays with him and is very kind + gentle with him.

Today she said he is just so sweet. He compliments the others all the time + today he told someone they were beautiful! ๐Ÿฅฐ๐Ÿฅฐ๐Ÿฅฐ๐Ÿ–ค๐Ÿ–ค #nurtureovernature#raisegoodhumans

Getting ish done this week despite emotional breakdowns and wrenches thrown my way. โ€œItโ€™s all just too muchโ€ is a phrase Iโ€™ve been using.
As a victim of #domesticviolence that almost took my life (twice) having to deal with your assailant on any level is beyond traumatic.

But no matter what the level of angst and trauma that continues to come my way nothing compares to the life (more like death) that was going to be my future had we stayed.


So fuck yes itโ€™s too much at times.

But with John by my side and the boys in our arms there is nothing we canโ€™t get through. ๐Ÿ–ค๐Ÿ–ค๐Ÿ–ค๐Ÿ–ค All things are possible with ๐™‚๐™๐™„๐™ ๐™‚๐™๐˜ผ๐˜พ๐™€ + ๐™Š๐™๐™ ๐™‚๐™„๐™๐™!

spend time, not money

Being a single mom I have to say no to things they want and lot of times I have to say no to things they donโ€™t even want like school pics because I donโ€™t have the money. ๐Ÿ˜•

However things like our family walk we started a couple weeks ago prove to me itโ€™s not about the things or giving to them. Itโ€™s about spending the time and making the memories. ๐Ÿฅฐ

Let motherhood be more about what you do with your children instead of what you do for them. ๐Ÿ–คโœจ

Cucumber Salad

I love sushi.

We make all sorts of Asian inspired dishes at home but sushi is just one Iโ€™ll leave to the pros. Side dishes and stir fry however is fair game.

I have wanted to make my favorite salad to a great sushi night. The light and refreshing ever so yum Cucumber Salad. ๐Ÿฅ’

This recipe is made with coconut aminos instead of soy sauce, which is great if youโ€™re like me and love soy sauce recipes but would rather avoid the soy part. Itโ€™s gluten-free which makes it excellent for anyone on a low-carb diet!

I wasnโ€™t sure this would taste like one off the menu but I was happily surprised.

Ingredients

Directions

  1. Chop and slice cucumber to your liking set aside in dish.
  2. Combine rice vinegar, sesame oil, coconut aminos and salt to bowl.
  3. Add oil + vinegar mixture onto cucumbers ๐Ÿฅ’ mix til covered.
  4. Sprinkle sesame seeds in top.
  5. Serve + eat immediately or store in air tight container for up to 2 days.
All soy flavor, none of the soy!! ๐Ÿค—๐Ÿ‘๐Ÿผ

Letโ€™s talk Coconut Aminos

Coconut aminos is relatively low in calories and carbs. It fits into virtually any diet, such as Paleo, vegan, low-carb, kosher, and keto.

What are coconut aminos? Coconut aminos is a liquid condiment that is very similar to soy sauce, except itโ€™s made from the โ€˜sapโ€ of coconuts, or the coconut-blossom nectar. It has a dark, rich, sweet, and salty flavor, and the texture is almost identical to real soy sauce, but without gluten, soy, or MSG. Because it is made using the sap of coconut, coconut aminos has a slightly sweet and salty flavor. However, it only contains one gram of natural sugar per tablespoon serving.

Chicken Philly Stuffed Peppers

Ingredients

  • 4 Colored Peppers
  • 1 Small Yellow Onion
  • 1 lb of Chicken Breast
  • Chicken Broth or Water (for chicken)
  • 2 T. Italian Seasoning
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4-6 slices Provolone Cheese
  • 1 Cup Mozzarella Cheese

Directions

  1. Cook Chicken in the Instant Pot. I do 15 minutes on manual with slow release. I cover chicken in IP while cooking with broth, you can use water but liquid is needed to keep chicken from drying out.
  2. Shred Chicken.
  3. Add Italian Seasoning, Salt + Pepper to Chicken and set aside.
  4. Cut open peppers and clean out seeds.
  5. Place peppers on baking sheet inside face up.
  6. Cut and dice onion and cook til soft.
  7. Combine cooked onion, shredded mozzarella cheese, and chicken into one bowl.
  8. Stuff mixture into the peppers on baking sheet equally.
  9. Add provolone to tops of peppers to cover.
  10. Cook at 350 degrees for 10-15 mins until cooked and melted.
